Mud and Gravel Parfaits

My son is crazy about construction trucks.  One of the books that we read over and over is Slide and Find - Trucks.  It has four sliding doors on each page and we've read this so often in the past four years that everybody in the family has it memorized.  Even my daughter, who does not especially like trucks, loves this book because of the sliding doors.

When I recieved a shipment of Udi's granola I knew that I wanted to make it into some gravel on top of a parfait. And I needed something to go with the "gravel" so I decided to make some chocolate pudding "mud".  (I had no idea June 29 was International Mud Day until I read Growing a Jeweled Rose's 30 mud activities.)  I found an easy recipe for chocolate pudding that sneaks in some healthy fats at Project Granola Mom.

1 ripe avacado, peeled and quartered
1/4 c. cocoa powder
1/4 c. sugar (original recipe calls for raw agave nectar)
1/4 c. milk (original recipe calls for almond milk)
1 tsp. vanilla extract

Combine in a food processor or blender.  Makes about 1 1/2 cups.

I layered the Vanilla Udi's granola with the chocolate pudding.  Then I traced and cut out a picture of a digger and taped it to the spoon.
